I have periods of time where I eliminate all meat from my diet and go completely vegetarian. Usually, it happens every couple of months and I like to post photos of my dishes.

This is one of the ways I practice having a healthy beauty routine from the inside out.

I will say, in a normal week, I try to limit my meat intake to a handful of times a week. Most of the time this isn’t on purpose. I just like fruits and vegetables. Here is my post on limiting dairy in my diet.

There are a handful of reasons why every few months I go a week or two without eating meat.

  • My body feels a lot lighter – I’m not stuffed and heavy
  • My mind is more clear and less foggy
  • I have more energy due to my body not having to process meats
  • It’s better for the environment

Typically, I eliminate meat when I have a busy month ahead or feel like my body has a constant heavy feeling.

Why I’m Not 100 Percent Vegetarian

I don’t embrace a completely vegetarian diet due to how it impacts my body. A few years ago I initially wanted to eliminate meat for a month, but then a month turned into nearly a year without me realizing it. While I felt great during that time, I also lost a noticeable amount of weight without trying.

I actually like my curves and embrace them, so I didn’t like the “smaller” look on me. This is why I now only eat vegetarian foods for weeks at a time.

This was simply my personal experience, and everyone’s body is different. It’s not to say you shouldn’t or should be vegetarian. I just wanted to share my story.

Many of you wanted to know what I eat when I get on this type of elimination diet.

My Vegetarian Meals

My lastest dish was vegetarian chili. It is made with chickpeas, meatless crumbles, white beans, onion, and garlic.
You’ll see a handful of smoothie bowls. This Blue Majik bowl from Greenleaf Juicing Company is seriously one of my favorites. It has mangos, spirulina, coconut oil, and other good-for-you ingredients.
This next acai smoothie bowl is from Pearings Cafe and Frozen Yogurt in downtown Indianapolis.
This is a photo of my homemade veggie stirfry that is incomplete. This photo is missing rice noodles. I stirfry the veggies in teriyaki sauce and then add cooked rice noodles for a complete meal.
At one point I was absolutely obsessed with Ceaser salads. Eventually, I stopped buying them and started making my own at home.
This Morning Synergy bowl from Ezra’s Enlightened Cafe is seriously one of my favorite morning go-to dishes. It’s made with Carrot muffin “granola”, fresh banana, goji berry, hemp seeds, and almond milk.
At Cha Cha Matcha in California, I watched their team assemble my fresh matcha lemonade and it was so tasty!

While it may seem as though I only eat smoothie bowls, there are tons of other items missing off this list like:
